Why Do Vegetables Go in the Bottom Drawer of the Fridge?

Quick Answer

The bottom drawer is enclosed, so it traps humidity around the produce — and vegetables wilt when they lose moisture. It also shields them from the dry circulating air and sits furthest from the door, giving the steadiest temperature in the fridge.

Quick verdict

Vegetables go in the bottom drawer because it’s an enclosed compartment that traps humidity. Vegetables wilt when they lose moisture, and the sealed crisper keeps the air around them damp while shielding them from the dry, moving air of the cooling system.

Being at the bottom also means a steadier temperature — the drawer is furthest from the door opening, so it barely warms when you reach in for something. That combination of damp air and stable cold is exactly what keeps your sabzi crisp for days rather than hours.

The reasons

Why is the vegetable drawer at the bottom of the fridge?

Reason What’s happening
Humidity is trapped The drawer is enclosed, so moisture released by the vegetables stays around them instead of escaping. Vegetables wilt when they dry out
Shielded from dry air The cooling system circulates cold, dry air through the main compartment. The drawer keeps vegetables out of that airflow
Stable temperature The bottom is furthest from the door, so it’s least affected by warm air entering each time you open it
Cold air sinks Cold air is denser and settles downward, making the lower part of the fridge the most consistently cold area
No drips from above Enclosed drawers protect vegetables from anything leaking off shelves above, including raw meat juices
Store it properly

How to actually use the crisper

Keep fruits and vegetables apart. Many fruits — apples, bananas, mangoes — release ethylene gas as they ripen. Ethylene speeds up ripening and spoilage in vegetables, so leafy greens stored next to fruit go limp and yellow much faster. If your fridge has two drawers, use one for each.

Use the humidity slider if you have one. Set it to high humidity (vent closed) for leafy vegetables, coriander, mint and anything that wilts. Set it to low humidity (vent open) for fruits and anything that rots when damp, since the open vent lets ethylene and excess moisture escape.

Don’t wash before storing. Surface water encourages rot. Wash vegetables just before you cook them, not when you bring them home.

Don’t overfill. Air needs to move around the produce. A crammed drawer traps warm spots and speeds up spoilage.

For our kitchens

Storing sabzi the Pakistani way

Most of us shop the sabzi mandi in bulk, so storage decides how much gets wasted. A few practical points. Hara dhania and podina wilt fastest — wrap them loosely in a slightly damp cloth or paper before putting them in the drawer, and they’ll last several days rather than one. Don’t refrigerate potatoes, onions or garlic: cold turns potato starch to sugar and makes onions soft, so keep them somewhere dark and airy instead. Tomatoes lose flavour and go mealy in the fridge — keep them out unless they’re already very ripe. During load-shedding, keep the door shut; a well-filled fridge holds its cold for hours, and every opening lets warm, humid air in that the compartment then has to work to remove.

Common questions

Vegetable storage: FAQs

Why are vegetables kept at the bottom of the refrigerator?

Because the bottom drawer is an enclosed compartment that traps humidity around the produce. Vegetables wilt as they lose moisture, so damp air keeps them crisp. The drawer also shields them from the dry circulating air of the cooling system and sits furthest from the door, giving the most stable temperature in the fridge.

Should fruits and vegetables go in the same drawer?

Ideally not. Ripening fruits release ethylene gas, which accelerates spoilage in vegetables — leafy greens stored beside apples or bananas wilt and yellow noticeably faster. If your fridge has two drawers, keep fruit in one and vegetables in the other.

What is the humidity slider on the crisper drawer for?

It opens or closes a vent. Closed means high humidity, which suits leafy vegetables, coriander and mint that wilt when dry. Open means lower humidity, letting ethylene and excess moisture escape, which suits fruits and anything prone to rotting when damp.

Which vegetables should not go in the fridge?

Potatoes, onions and garlic keep better somewhere dark, dry and airy — refrigeration turns potato starch to sugar and softens onions. Tomatoes lose flavour and texture in cold, so keep them out unless already very ripe. Bananas darken quickly in the fridge too.

How do I stop coriander and mint wilting so fast?

Wrap them loosely in a slightly damp cloth or paper before placing them in the crisper. That keeps the humidity around the leaves high without leaving them sitting in water, which causes rot. Stored this way they last several days instead of wilting overnight.
