Sui gas or LPG cylinder?

Cooking ranges are normally set up for natural gas (Sui gas). LPG comes at a higher pressure and carries more energy, so it needs smaller burner jets (nozzles) and an LPG regulator. Running LPG through Sui gas jets gives a tall yellow flame that blackens pots and is unsafe. Ask for LPG nozzles when you order, and have them fitted before first use.

In Peshawar and much of the north, Sui gas pressure drops on winter mornings and evenings, and some areas face gas load-shedding. Many families keep an LPG cylinder as backup. If you do, have a technician fit the right jets when you switch, rather than swapping the pipe yourself.

Baking in a gas oven

In most gas ovens the heat comes from a burner under the oven floor. That bakes cakes, naan and pizza bases well, but the top browns only if the oven also has a grill burner. Preheat for 10 to 15 minutes, bake on the middle shelf and keep the door shut for the first half of the baking time. If the base burns, move the tin up a shelf.

• If you smell gas, turn off the supply, open the windows and do not switch lights on or off.
• Clean the burner caps and holes regularly so the flame stays blue and even.
